01 — Syntrium Masterclasses

Cooking that "works"
for your body

Practical instruction in healthy cooking methods — from nutrient-preserving heat techniques to fermentation — taught by professionals who cook this way every day.

Techniques with a clear purpose

Fermentation basics

Lacto-fermentation, water kefir, and simple miso preparations. No special equipment needed — just time, salt, and clean jars.

Fat selection and cooking stability

Understanding smoke points, oxidation, and which fats suit which temperatures. Covered through practical frying and sautéing exercises.

Raw preparation and enzyme activity

Soaking, sprouting, and marinating techniques that increase digestibility without heat. The science is explained simply — the focus stays on doing.

How a typical [session] is structured

Each masterclass follows a consistent pattern so you always know what to expect — and what you'll be able to do by the end of the lesson.

1

Context — why this method

A short explanation of what the technique does and when it applies. Around 5 minutes.

2

Live demonstration

The instructor works through the full recipe in real time, narrating decisions as they happen.

3

Guided practice

You cook alongside with a written reference card. Common mistakes are pointed out before they happen.

4

Variation and substitution

How to adapt the recipe given what's seasonal, what's in your fridge, or what dietary needs you're cooking around.

Dermot Hallinan

Culinary educator — healthy cooking methods

Dermot has worked in professional kitchens and culinary education for over a decade, with a particular focus on how preparation technique affects nutritional value. He joined Syntrium in 2018 to develop a curriculum that bridges practical cooking skill and nutritional awareness — without requiring a nutrition degree to follow along.

His approach is direct: understand what heat does to food, choose your method accordingly, and keep it repeatable. Each masterclass is built on this principle — specific, measurable, and grounded in what actually happens at the stove.

A few things people usually ask when they're deciding whether this is the right fit.

Ask something else
The masterclasses cover steaming, poaching, slow cooking, fermentation, and raw food preparation. The focus is on techniques that preserve nutritional value while developing real flavour — not on elaborate recipes that are hard to repeat at home.
No. Each class is designed around standard home kitchen equipment. Where a specific tool is useful, the instructor explains what it does and names affordable alternatives that achieve the same result.
Yes. All recorded sessions remain available in your account with no expiry date. Many participants rewatch specific parts when they're actually cooking — not just during the class itself.
Most modules are accessible from a basic level. The instructor assumes you know how to use a hob — nothing beyond that. More advanced sessions are clearly labelled and build on earlier ones.
Most sessions run between 60 and 90 minutes, including the live practice segment. Shorter focused lessons on specific techniques are also available and typically run 30–40 minutes.
